California Tortilla’s Fresh Guacamole
(Yields approximately one quart)
6 whole ripe No. 1 Hass avocados
1 cup Roma tomatoes, medium dice
1/2 cup red or white onion, small dice
1/2 tsp. black pepper
1 tbs. Kosher salt
1/2 tsp. garlic powder
Remove remaining stem from whole avocado and discard. Cut avocado lengthwise around big pit. Twist avocado open and remove pit. With large kitchen spoon, scoop out pulp into large mixing bowl. Using a potato masher, mash avocados into a chunky pulp.
Add diced tomatoes, diced onions, pepper, garlic powder and salt.
Gently fold ingredients together using a rubber spatula or wooden spoon. Transfer finished guacamole to a serving crock or bowl and serve immediately.
